Lentil Quinoa Salad

I have wanted to try some quinoa recipes for the longest. Today, I finally tried one. With the warmer months approaching I want to have some nutritious mini meals  available that are quick and easy to prepare when cooking is not on my mind. So, I decided to try Lentil Quinoa Salad.  The recipe turned out very well.  I really enjoyed the taste and the ease of preparation.  This will definitely be a dish that I will be making more of.

Here’s the recipe:

1/2 cup cooked quinoa

1/2 cup cooked lentils

1 tsp dijon mustard

2 tbsp red wine vinegar

1/4 cup olive oil

1/4 tsp garlic powder

1 lime zested

1/4 cup scallions

1 tbsp fresh cilantro

Salt and pepper

Combine quinoa and lentils in a bowl.  Set aside.  Combine mustard, vinegar, olive oil, garlic powder, and lime zest in a bowl and whisk until well blended.  Then add the mixture with the quinoa and lentils.  Add scallions and cilantro.  Add salt and pepper to taste. Enjoy!
